I visited Mega Gansha, located just a 5-minute walk from Kawagoe Station. It’s not a traditional Jiro-style ramen shop, but rather pioneering a new genre called “Jiro Respect” style.

This shop is owned by the same company, Ganja (頑者). Ganja provides a lot of ramen shops. This ramen shop is one of them.

There are variety of options such as Shoyu, Miso and Makanai, which does not have soup.

There are lots of options for free. I added more vegetables (Yasai), garlic (Ninniku) and oil (Abura) .

Kara Miso 950 yen

I ordered the spicy miso ramen (Karamiso) for 950 yen. For free toppings, I requested vegetables, garlic, oil, and fish powder. For the vegetable portion, you can choose between 200g, 400g, or 600g, and I opted for 200g.

The noodles were somewhat disappointing. They lacked any distinctive characteristics.

Considering chain stores like ‘Hikari’ or ‘Ganja’ offer delicious noodles, it’s a pity that this shop didn’t use those.

The soup, while labeled as spicy miso, wasn’t spicy at all, more like the mild heat of a kimchi hot pot.

I usually find the miso ramen at Nakamoto quite spicy, making me sweat, but this soup was a breeze in comparison.

It wasn’t bad, but not particularly delicious either. That might explain why it has more 4-star than 5-star reviews.

Being a Jiro-style “Respect” shop rather than a true Jiro-style, it seems to lack the ambition to surpass the original.

The chashu wasn’t bad. However, since the chashu at this chain’s other locations is delicious, I think they should share their knowledge and techniques more across their stores.

There was a somewhat generous amount of bean sprouts.

Miso Ramen

Miso ramen is coming here. It’s beautiful! It’s like Mt.Fuji.

I felt this noodle is not bad and nothing special. The amount is so large that I thought I could not eat a bowl of ramen. I should have told a clerk that I prefer a small amount of ramen.

The large amount of ramen is usually called Jiro-kei, which provides thick soup. I love it. However, this soup is not thick. I was disappointed.

The pork is very big. The taste is good.
