I visited Ramen Jiro’s Fuchu branch, which only operates during the evening from 17:00 to 22:00.
I arrived 20 minutes before opening on a weekday and was the fourth person in line.
The restaurant has only eight seats and operates on a four-lot system. The turnover rate isn’t very high.

I ordered a small ramen for 800 yen and an onsen egg for 100 yen. When I handed over my meal ticket to the owner, I requested less noodles.

Previously, it was said in reviews that this place had the thickest noodles among Jiro restaurants.
However, for better or worse, they have now changed to a more average thickness, typical of Jiro-style noodles.

The soup here is on the lighter side compared to other Jiro locations. I usually don’t ask for ‘karamé’ (extra sauce), but next time I visit the Fuchu store, I’ll request it.

The pork was super tender and delicious. It was a bit on the richer side in terms of flavor, but overall, it was tasty.
The vegetables were crisp and enjoyable as well.
The customer service was like that of a cheerful uncle chatting at an izakaya, a rare and pleasant change from the often tense atmosphere at many Ramen Jiro locations.
