I arrived in about 4 minutes on foot from Koshigaya Station. I got there about 30 minutes before the opening time at 11:30, and there were already 5 people waiting.
Ramen Jiro is famous for its indifferent customer service, but this shop opened about 10 minutes before the scheduled time. It’s a place considerate to Jiro fans.
I ordered Sho Ramen 小ラーメン, and request a clerk to reduce the amount in noodles (320g → 270g).
The ramen was served around 11:30. Unlike other stores, they don’t offer the option for firmer noodles. Also, you can’t get extra toppings like ‘mashi mashi’.
I opted for everything ‘mashi’ (extra) except for ‘karamé’ (extra sauce).
The total quality is awesome.
The noodles are on the softer side but still have a firm texture and are delicious.
However, they prohibit ‘katame’ (making one side of the noodles firmer), which I don’t really like. It might not be to everyone’s taste.
The soup is completely non-emulsified. Personally, I prefer the creamy type of soup, but among the non-emulsified ones, this is arguably the best in taste.
The pork was a bit on the firmer side, which I personally didn’t find too excessive.
The vegetables were crunchier compared to other shops, which I found delicious.
The garlic had a strong, rich flavor.
The atmosphere is much better compared with other ramen jiro shops.
I finished eating the ramen around 11:45 AM and left immediately, but the place was full with about 5 people waiting inside and another 15 waiting outside. It was quite a popular restaurant.
Next time I visit, I’ll order with less fat, no extra sauce or chili pepper, and with vegetables and garlic.
